I would suggest something along the lines of a native animal. For example: Brookhaven uses the well known bear-buck.
On a serious note, I think the currency should ideally remain the pound. However, in the event of a new currency, I would offer the name ton. After all, they are separating in retalitation to the United Kingdom. What better way to shove it to them than by naming their currency after something heavier than the pound.
